Raspberry Cream Cheese Cinnamon Brownies
These luscious rich brownies will be a hit this Valentine's Day! Here we used our cinnamon cocoa mix to compliment the cream cheese and raspberry flavors.  Makes 9 small brownies, best served chilled.

Brownie Batter:
  • 224g granulated sugar
  • 100g all purpose flour
  • 127g cinnamon cocoa mix
  • 63g powdered sugar
  • 1 teaspoon salt
  • 2 large eggs
  • 1/2 cup olive oil
  • 2 tablespoons water
  • 1/2 teaspoon vanilla
  • 86g semisweet or dark chocolate chips

Directions:
  1. Preheat the oven to 350F and line a 8x8 baking pan.
  2. In a large bowl, add the first five dry ingredients and stir to combine.
  3. Add all wet ingredients to the bowl and mix just until the flour disappears. Do not over mix; this batter should be lumpy.
  4. Fold in chocolate chips and set aside.

Cream Cheese Filling:
  • 166g cream cheese, softened
  • 44g sour cream
  • 75g granulated sugar
  • 1 large egg white
  • ½ teaspoon pure vanilla extract
  • 15g all purpose flour
Directions:
  1. Add cream cheese, sour cream, and sugar to a medium sized bowl. Use a stand or hand mixer on medium speed until light and fluffy.
  2. Add egg white and vanilla. Mix on medium high.
  3. Add flour and mix on low until combined.

Assembly:
  1. Add 3/4 of the batter to the bottom of the pan.
  2. Add spoonfuls of cream cheese mixture and the rest of the brownie batter on top.
  3. Using a small knife, start swirling the batters together, creating a marbling effect.
  4. Add whole raspberries.
  5. Bake for about 40 minutes.
  6. Store in an airtight container in the fridge for up to 5 days.

Pro Tip:
  • Best served cold!

Thank you for the comment Naomi! We are taking this request seriously, but seriously noodling on how to actually make it happen. Volumetric measurements are less consistent. There are great scales on Amazon for less than $15!

Looooooove your chocolates!
Wondered if you could give the ingredients here in ounces, if not in cups. Those of us without a scale have to do 2 conversions for each ingredient in order to make this.
