Recipe: Hops & Clover Honey Chocolate Ice Cream

Chocolate ice cream made with Intrigue's Hops & Clover Honey chocolate bar is a must this summer! The creamy ice cream finishes with sweet honey notes, followed by a hint of slightly floral hops that lingers beautifully.

Hops & Clover Honey Chocolate Ice Cream

4-6 servings

Ingredients:

  • 1 Hops & Clover Honey spiced bar, chopped
  • 1 cup heavy whipping cream
  • 1/2 cup whole milk
  • 86 grams demerara sugar
  • pinch of salt
  • 3 medium egg yolks

Directions:

  • Warm the cream in a small saucepan until just steaming.
  • Take the pan off the heat and add chocolate. Let sit for 2 minutes, then start stirring to combine.
  • Once the chocolate is melted and combined with the cream, pour this mixture into a medium sized bowl and set a mesh strainer on top of the bowl.
  • In the same saucepan, warm milk, sugar and salt until steaming. Set aside
  • In a small bowl, whisk together the egg yolks. Slowly pour in the warm milk mixture, stirring constantly. Scrape this mixture back into the saucepan on medium heat.
  • Stir the mixture constantly with a heatproof spatula. scraping the bottom as you stir, until the mixture thickens and coats the spatula.
  • Pour the custard through the strainer on top of the chocolate mixture. Stir until smooth.
  • Chill the mixture thoroughly in the refrigerator, then freeze it in your ice cream maker according to its instructions.

Pro tip: if the mixture is too thick to pour into your ice cream machine, stir until it is pour-able.
