Recipe: Chocolate Mint Cookies

These 🍫 mint cookies are a delicious end of summer treat. They have a soft and dense texture that begs to be dipped into a cup of coffee or cocoa. You will get an occasional toffee crunch from the  large grain sugar in our cocoa mix .  You gotta try these. Enjoy!

Chocolate Mint Cookies
makes 13 cookies



  • 5 ounces salted butter, softened
  • 4 ounces brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 6 ounces all-purpose flour
  • 4 ounces Intrigue's Mint Cocoa Mix
  • 1 teaspoon cornstarch
  • 3/4 teaspoon baking soda
  • pinch of salt


  1. Preheat the oven to 350 degrees Fahrenheit
  2. Stir together flour, cocoa mix, cornstarch, baking soda, and salt in a medium bowl. Set aside.

  3. Cream butter and brown sugar until light and fluffy; this step takes approximately 7 minutes. Take your time.
  4. Beat in egg and vanilla until smooth.
  5. Gradually mix in flour mixture until a dough forms.

  6. Cover bowl and place in the refrigerator for at least two hours.
  7. Using a kitchen scale, weigh a 1 1/2 ounce ball of cookie dough and place on a cookie sheet.  Press down slightly on the dough ball until it looks like a hamburger patty.
  8. Bake for 8 minutes. Let cookies sit on a cookie sheet for a few minutes before transferring to a cooling rack.
  9. Store in an airtight container for up to 4 days.


  • Make dough the day before and let it rest in the refrigerator overnight for maximum texture.
  • It is easy to over bake chocolate cookies due to their dark color. Carefully touch the edges of the cookie, if they are set and the top is beginning to set, they are ready to come out of the oven.
  • You will feel the crunch from unmelted sugar from our cocoa mix; they are meant to be there.
