Our energy bites recipe has few ingredients, is extremely easy to make and makes a portable, on the go snack. Being full of protein, these bites may help you stay on track with your resolutions. They are sooooo irresistibly delicious!
2 tablespoons cocoa mix (any flavor will work, we used cinnamon)
2 tablespoon water, hot
1 cup oatmeal
1 tablespoon cacao nibs
1/4 cup peanut butter
2 tablespoons honey
2 teaspoons chia seeds
In a small saucepan, heat water till simmering then add cocoa mix. Stir until sugar is dissolved, then set aside to cool. Make sure chocolate sauce is cooled before step 3.
Add oatmeal and cacao nibs to a food processor and pulse five times.
Pour mixture into a medium size bowl then add the rest of ingredients and chocolate mixture.
Using a wooden spatula, mix until combined. You may have to use your hands to thoroughly mix.
The mixture will be crumbly but should stick together when pressed in your palm.
Cover and place in the fridge for a few hours to set.
Shape into bite sized pieces.
Store in the fridge for up to a week, but they won't last that long!
