This very simple dessert will have guests thinking they are at a fine dining affair!
serves 2
1 fresh pear
1/4 cup Cinnamon spiced cocoa mix
2 tablespoons boiling water
1/2 cup ricotta
2 tablespoons heavy whipping cream
1 tablespoon granulated sugar
1 tablespoon cacao nibs
1 tablespoon roasted pecans
Mix cocoa nibs and pecans together in a small bowl. Set aside.
Add cinnamon cocoa mix and hot water to a small bow. Combine with a small whisk until sugar is dissolved. You may add more water or cocoa mix depending on how thick you want the sauce. Set aside.
Add ricotta and sugar to a small bowl. Mix with a hand mixer for about a minute.
Sugar needs to melt into the cheese. Add whipping cream one tablespoon at a time until combined. Turn up the mixer and beat for 30 seconds. The texture should be like yogurt but a little grainy from the cheese. Place in the fridge for about 1 hour.
Slice pear right before serving. We recommend a bosc pear but you can use anything you have on hand.
