Chocolate Strawberry Crepés

Check out our cinnamon chocolate crepés with strawberries, cream and a drizzle of ganache. We used Intrigue's Cinnamon Cocoa Mix and Sipping Chocolate for the ganache.

Crepé batter: (Make the night before) makes 8 crepés

  • 400 ml milk
  • 80 g cocoa powder
  • 4 large eggs
  • 45g butter melted
  • 2 tsp vanilla
  • 50g granulated sugar
  • 1/2 t salt
  • 145g flour


  1. To a small saucepan, add cocoa mix and milk. Heat on med-low and stir until steaming and all the sugar has melted. Set aside to cool. (20 minutes)
  2. Add all ingredients to a blender and blend on medium high until everything is combined.
  3. Scrape down the sides of the blender at least once during the mixing process.
  4. Pour into a medium sized bowl, cover, and place in the refrigerator for at least 30 minutes but overnight is preferred.


  • 2 pints fresh strawberries
  1. Wash and dry strawberries. Chop and set aside.


  • 3 ounces sipping chocolate, melted
  • 3 ounces heavy whipping cream
  1. Add heavy whipping cream to a small bowl and heat in the microwave in 10 second intervals until steaming. Then, add sipping chocolate and let it rest - covered - for 3 minutes.
  2. Stir until chocolate is completely combined and glossy; set aside until needed.  See HERE for more on making chocolate ganache!  (add link)

Whipped Cream Filling: (make right before service)

  • 110g cream cheese
  • 50g  sugar
  • 1/2 t vanilla
  • 1/4 almond extract
  • 8 ounce heavy whipping cream


  1. Place your mixing bowl into the freezer for 15 minutes before mixing.
  2. Add cream cheese and sugar to the cold bowl and combine with a whisk attachment with a stand or hand mixer. The scrap down the sides of the bowl.
  3. Add extracts and mix again.
  4. Add heavy whipping cream in three batches slowly; making sure it is completely blended before adding more.
  5. Cover and store in the fridge until ready to use. Best if used the same day.


  • Make crepé batter the night before for the best flavor and texture.
  • Do not leave out the almond extract in whipped cream filling.
  • Cut a few strawberries lengthwise and dip in chocolate ganache as a garnish!
  • You can use any berries you like; raspberries and blackberries would be lovely.
