Ucayali River Cacao is working with almost 400 farmers to source fine flavor cacao, most within a 30 minute drive of the fermentation/drying facility.

60% Flavor Notes
This chocolate has notes of ripe pear, white clover flowers, and roasted barley malt. It has low bitterness and astringency, but full-bodied chocolatiness.

78% Flavor Notes
This chocolate has flavors of tart green apple, fresh apple blossoms, and stout beer served on nitrous. It has low bitterness and astringency, but full-bodied chocolatiness.
