After months of demolition, plumbing, electrical work, flooring, wall finishes, inspections, and a truly impressive number of tiny decisions, our new chocolate kitchen in Chisholm is finally starting to look like a chocolate kitchen.
When we first began work on the building, much of the first floor was still hidden under decades of alterations. One of the best surprises was discovering the original stamped-tin ceiling above an old drop ceiling. We decided pretty quickly that it deserved to stay.
Now the ceiling is cleaned up and painted, the new floors are in, the kitchen walls are finished, the sinks and plumbing are installed, and the lights are on.
And the room is enormous.
After years of working in much smaller spaces in Seattle, it is still a little strange to stand at one end of the building and look all the way down toward the kitchen. Most of the first floor will remain open for storage, packing, classes, events, and whatever else Intrigue grows into over time.
At the back of the building is the new production kitchen. It includes our three-compartment sink, handwashing sinks, food-prep sink, floor drains, washable wall surfaces, new electrical service, and the other infrastructure required for licensed chocolate production in Minnesota.
There is still plenty left to do. Equipment needs to move in. Shelving and work tables need homes. We have inspections to complete. And, inevitably, there will be another list of things we haven't thought of yet.
But this is the first time in a long while that the project feels less like construction and more like a place where we are about to make chocolate.
